The problem is probably a legality thing. In Germany for example AFAIK people need to be told they are recorded and must accept to this. So by implementing such a feature, you need to adhere to local laws, which differ from country to country and may make it way to complex and dangerous to implement.
That seems like quite a large endavour. And I’m always a fan of alternatives. One thing I do not fully understand is the, I do not want to selfhost so its federated. Somebody needs to host in the end, why can’t it be you?

If you find yourself not able to commit to LibreOffice you can always try OnlyOffice. For people that are used to the Microsoft products, those are quite easy and samey feeling replacement’s.
How did you get Monica running? I’ve tried the docker scripts but had no luck with them.
Depending on the software you need and how technical you are, Wine and Bottles may be a solution to not need an VM.
